1 cup grated carrot
3/4cup chopped walnuts
1/2 cup chopped dates
1 1/2 cup blanched almond flour
2 tbsp coconut flour
1 egg
1/4 cup unsalted butter or palm shortening
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp ginger
1/2 tsp allspice
1/2 tsp nutmeg
1/4 tsp cinnamon

1.Coat two mini-muffin pans with non-stick cooking spray. Preheat oven to 350 F.

2.In a large bowl, whisk together flours, baking soda, powder, salt and cinnamon. In a medium bowl, mix together oil, sugar, milk and egg. Pour egg mixture into flour mixture and stir just until combined well. Gently stir in carrots.

3.Spoon about 1 tablespoon of batter into each cup of mini muffin pans. Bake for 10-12 minutes until toothpick inserted into center comes out clean. Repeat with remainder of batter.

4.Bake for 14 minutes. The next is to enjoy!

I love the idea of mixing several kinds of cookies and small treats with one big fancy cake and one warm dessert. All the desserts can be made over the course of a few days–even the blintzes could be made the day before and then warmed up in the oven just as guests arrive.

If you like chopped nuts or raisins in your carrot cake, you can add as you like. Someone who loves carrot cake must try this recipe. They do offer you a different flavor. The carrot cake actually smells very nice, well and tastes nice too. The carrot cake is nicely fries and the outside kinda crispy to me, yummy! You will certainly fall in love with it!
